Almond Croissants

You can easily make your own almond croissants at home. It only takes a few ingredients to have a delicious weekend treat, warm and fresh out of the oven.


Ingredients

1/2 cup sugar

1/2 cup water

1 tsp almond extract

Odense Almond Paste - 7oz

2 eggs

1 stick of unsalted butter, room temperature

1/2 cup of sliced almonds

pinch of salt

8-12 day old croissants, cut in half horizontally

powdered sugar for finish

In a saucepan, put water and granulated sugar in and turn on stove heat to medium/high. Let sugar dissolve, then let simple syrup reduce - about 7 minutes, add in almond extract at the end. Put to the side. In a food processor put in almond paste, salt, butter and eggs. Blend until a smooth puree forms, taste for sweetness (if you feel like you need sugar, add 2 tbsp of confectioners sugar if needed).

Turn on oven to 350F and lay croissants on baking sheet. Brush insides of croissants well with almond simple syrup. Then fill inside of croissants with almond cream, then close the croissants and spread a little almond cream on top of croissant and sprinkle with almond slices. Bake croissants 15 minutes. When croissants are done baking, top with powdered sugar.
