Miso Eggplant

Hi guys! I hope you’re all doing well.

I came across this YouTube channel called Marion’s Kitchen. Marion is half Thai and many of her dishes are South East Asian and Asian inspired. Check out her channel, the recipes aren’t difficult and it’s nice to watch a video to see how dishes are made, especially if you’re a visual learner like me.

Some Tips:

  1. Serve with some rice to complete your meal!

  2. Tastes best with the chili oil as a topping. If you want to make it, here’s a link to the recipe.

  3. This dish was delicious, BUT, I would cut down the soy sauce and miso. It was a little too salty for me - even though I used low sodium soy sauce.

  4. I didn’t need to cook the eggplant for a whole 10 minutes, it would have been too mushy if I did. I cooked the eggplant for about 6 minutes.
